Blanose CMC is a water-soluble powder made from carboxymethylcellulose (CMC, E466), used by ice cream makers as a stabiliser and thickener.
It binds free water in the mix, slows the growth of ice crystals, increases viscosity and improves the creamy mouthfeel. The ice cream stays smooth for several days in the display cabinet and melts more slowly. It suits dairy and fruit ice creams and sorbets.
The recommended dosage is 4 g per litre of mix. Stir the powder evenly into the mix while mixing so it does not form lumps. Available in packs of 5 x 2 kg and 25 kg.
