We usually associate ice cream with summer, but it can earn a place on the menu in the colder months too. Autumn and winter are a great time to explore new flavours, interesting combinations and desserts that bring together warm and cold elements.
As temperatures drop, guests’ cravings change too. Refreshing fruit flavours give way to richer chocolate, nutty and caramel combinations that pair beautifully with warm desserts.
For ice cream parlours, pastry shops and food service venues, this is a chance to complement the classic offer with seasonal specialities. You don’t always need to develop entirely new recipes – well-chosen toppings and a different way of serving are often enough.

1. Warm and cold – a combination that never fails to impress
The contrast between warm desserts and cold ice cream creates a special experience. A scoop of vanilla ice cream can complement a freshly baked apple strudel, while chocolate ice cream goes wonderfully with warm waffles or pancakes.
Decorative toppings add the finishing touch, enriching the dessert with flavour and an appealing look.
Combination ideas:
- Apple strudel, vanilla ice cream (Vanilla paste) and Caramel Cream topping
- Warm waffles, chocolate ice cream (Chocolate paste) and Rocher decorative topping
- Pancakes, vanilla ice cream and Amarena decorative topping
2. Flavours that suit the colder months
Autumn and winter are ideal for combinations that highlight chocolate, cookie, caramel and nutty notes. Even classic flavours can become interesting seasonal variations with decorative toppings.
Some ideas for inspiration:
- Cookie & chocolate – creamy cookie ice cream (Cookie paste) with Choco Cookie decorative topping.
- Vanilla & caramel – a classic flavour enriched with caramel topping.
- Chocolate & hazelnut – a rich combination of chocolate ice cream and Rocher decorative topping.
- Pistachio Dubai – intense pistachio ice cream with Decor Pistachio Dubai topping and roasted pistachio pieces for sprinkling. A rich, premium combination that is currently very popular with guests.
- Yoghurt & forest fruits – a slightly fresher alternative which, with the forest fruits decorative topping, creates an interesting contrast to richer winter flavours. The base can be Yoghurt powder flavouring.
Such combinations can be part of your permanent menu or presented as seasonal specialities.
3. Expand your offer with desserts in a glass
Ice cream is not the only way to use pastes, flavourings and toppings. They also make an excellent addition to various pastry products.
Desserts in a glass allow many combinations of creams, biscuit layers and fruit or chocolate toppings. Their attractive look and easy serving make them an interesting choice for pastry shops, cafés and other food service venues.
You can try combinations such as:
- cheesecake cream (Cheese Cake flavouring) with forest fruits,
- vanilla cream with caramel topping,
- chocolate dessert with a biscuit layer.
Dubai chocolate in a glass
A true seasonal speciality is a dessert in a glass inspired by the popular “Dubai” combination of chocolate, pistachio and the fresh fruity note of strawberries. Build it in layers:
- a crunchy base of crumbs, for example Crumble or crushed biscuits,
- a chocolate cream layer: add cocoa powder to Confectionery Cream and you get a smooth chocolate cream,
- pieces of fresh strawberries,
- Decor Pistachio Dubai decorative topping,
- roasted pistachio pieces for sprinkling.
Tip: you can repeat the layers and serve the dessert in a glass or small cup that is visible to the guest. The same method works with other toppings – just change the flavour and colour of the top layer. Cut the strawberries into small pieces so the layers stack neatly. Without cocoa you get a classic cream layer.
Different topping flavours let you create several variations from one basic dessert and so liven up your offer. You can find more products in the Confectionery and Decoration category.
4. Don’t forget hot chocolate
As temperatures drop, warm drinks become more appealing. Hot chocolate is therefore an excellent addition to the autumn and winter offer of cafés, pastry shops and food service venues.
The Motivi range includes products for preparing classic, white and orange hot chocolate, which you can add to your seasonal menu. You need 200 g of product per litre of milk.
Combined with pastries or other desserts, you can create a complete offer for colder days.

Seasonal changes can be a great opportunity for creativity. With a few well-considered combinations, an attractive presentation and a broader offer, you can give guests new reasons to visit outside the main ice cream season.
